Keto Carrot Cake With Keto Cream Cheese Frosting


  • 4 cups fine almond flour

  • 1 cup shredded carrots

  • 4 large eggs

  • 2 tbsp of baking powder

  • 1 tsp salt

  • Optional- vanilla, chopped nuts, cinnamon, nutmeg 

  • Frosting
  • 8 oz cream cheese, room temp

  • 4 oz butter, room temp

  • Vanilla extract

  • Splash of milk if needed


  • Preheat oven to 350° F. Grease 2 round cake pans and line with parchment paper

  • Stir ingredients together and spread into pans. (See my trick to getting this thick batter to spread in my video)

  • After they have cooled, they are ready to frost.

  • Frosting
  • Combined the butter, cream cheese and vanilla until smooth. Add a splash of milk if frosting seems too thick.

  • Frost your layers first then if you have extra, you can use a piping bag to make it look a little more fancy!

  • Sprinkle a few grated carrots on the top for garnish.
