Keto Carrot Cake With Keto Cream Cheese Frosting
Ingredients
4 cups fine almond flour
1/2 cup Lakanto Classic Monkfruit
1 cup shredded carrots
4 large eggs
2 tbsp of baking powder
1 tsp salt
Optional- vanilla, chopped nuts, cinnamon, nutmeg
- Frosting
8 oz cream cheese, room temp
4 oz butter, room temp
2 cups powdered monkfruit
Vanilla extract
Splash of milk if needed
Directions
Preheat oven to 350° F. Grease 2 round cake pans and line with parchment paper
Stir ingredients together and spread into pans. (See my trick to getting this thick batter to spread in my video)
After they have cooled, they are ready to frost.
- Frosting
Combined the butter, cream cheese and vanilla until smooth. Add a splash of milk if frosting seems too thick.
Frost your layers first then if you have extra, you can use a piping bag to make it look a little more fancy!
Sprinkle a few grated carrots on the top for garnish.
