Air Fryer Breakfast Pockets for Dinner + Bonus Meal!

In our home, we frequently eat breakfast food at dinner time. It is difficult to make a meal that everyone in my family will enjoy, and breakfast is always a safe bet. I recently tried out a recipe that combines several different breakfast favorites into one easy-to-contain pocket. The stars of the meal? Pillsbury Grands Biscuits and my Vortex Air Fryer. Who doesn’t want an excuse to sneak biscuits into their meal? Plus, the quicker I can cook with my air fryer, the faster we all get to sit down and eat, and the easier the rest of my evening is.

Let me share this husband and kid-approved breakfast pocket recipe with you! Featuring only 3 main ingredients, this recipe is guaranteed to make your life easier. Plus, the total cooking time is 12 minutes or less. This simple breakfast pocket recipe has just a few steps and makes 8 large servings, as well as a bonus meal with leftovers!

What You Need

You will need a few ingredients and several kitchen essentials to create this recipe at home:

Kitchen Tools

Air Fryer (I love my Vortex Air Fryer from Amazon)

Rolling pin

Silicone baking mat

Large pan

Spatula

Ingredients

2 lbs of ground turkey

6 large eggs

1 package of Pillsbury Grands Biscuits

Shredded cheddar cheese (or whatever your family likes best)

1 package of Pioneer gravy mix (or your choice of gravy mix)

Cooking oil

Salt to taste

Pepper to taste

Cooking the Ground Turkey

Let’s jump in. First, heat up a large pan to medium heat. Grab your ground turkey (I bought mine at Costco), and when the pan has heated, throw in your turkey, season with salt and pepper, and then cook your ground turkey until brown. Once the turkey is done, you will want to set it aside to drain. I used a plate with a paper towel to absorb any excess grease.

Scrambling the Eggs

Crack six eggs directly into a pan on medium heat. There is no need to crack the eggs into a bowl first and waste a dish! Season with salt and pepper. Move the eggs around so that they don’t stick to the pan. Once the eggs are fully cooked, you can now add your ground turkey back into the pan, mixing it with the eggs.

Assembling the Breakfast Pockets

Now, you are ready to start assembling your breakfast pockets. You will need a silicone baking mat; I got mine from Amazon. You will also need a rolling pin and your package of Pillsbury Grands Biscuits. My family likes the butter variety—I also think that they work a little bit better in the air fryer.

Next, pop your package open, grab one biscuit, and roll it out on your silicone baking mat. Make the biscuit as big and flat as you can without it busting open. Once you have done this, you are ready to add in your ground turkey and scrambled egg mixture. To do this, add a small scoop of your egg and turkey mixture to the middle of the flattened biscuit.

The next step is to sprinkle shredded cheese on top before you close up the pocket. Use whatever cheese you have on hand (whatever your family likes best). Then, fold the rolled-out biscuit in half and pinch the edges together–you will end up with a taco-shaped breakfast pocket. Repeat this process with each of the biscuits in the can until you have used up the entire can of biscuits (8 biscuits).

You will have some leftover egg and turkey mixture. Set this aside to use later–it will be used to make your bonus meal.

It is time to get the pockets ready for the air fryer. First, place 4 pockets on each tray. After you put the pockets on the trays, spray them lightly with cooking oil so that they will brown up. Then, put your pockets into the air fryer. If, like me, you are using the Vortex Air Fryer, put one tray at that on the very bottom, and one on the very top. When it is time to rotate the trays halfway through cooking, flip-flop the bottom tray and the top tray, which will ensure that they won’t be burnt and that they will be cooked all the way through.

Set your air fryer to 350 degrees Fahrenheit, let the pockets cook for 6 minutes to start, and see what they look like. This will be the halfway mark, as the total cook time is around 12 minutes. The pockets are done when they have browned on top.

What takes these to the next level is gravy. I like to use Pioneer dry gravy mix. It is so easy to make. You just pour it into boiling water and stir. Now you have a tasty sauce for those breakfast pockets.

To serve, plate up, and drizzle gravy on top. I cut my kids’ pockets in half so that they will cool faster. My family loved this meal, I hope yours does too.

Bonus Meal

You will want to grab some medium tortillas and wrap up the rest of the turkey and egg mixture the in tortillas. Then, wrap the tortillas in aluminum foil, and throw them in your freezer. You will have frozen burritos for the week as well!

1 Dish Chicken and Rice for Dinner Tonight

For me, dinner has to be easy and simple. Being a business owner and a mom of three, my schedule is full. So, I make it a goal to save time in the kitchen, which makes more time for life. One-dish meals are some of my absolute favorites. Not only is preparation simpler but clean-up time is also faster. I want to share with you a recipe that has become a fan favorite at our house, both for my husband and my kids. My one-dish chicken and rice casserole is flavorful, creamy, full of protein, and very filling. It’s a crowd pleaser for me, and I think it will be at your home too. So whether you’re a busy mom like me or simply looking for a tasty new recipe to try, this chicken and rice dish is the perfect addition to your recipe collection. Let’s get cooking!

Interestingly, the star of this dish is Lipton Onion Soup mix. I use this dehydrated mix all the time in meatloaf, turkey meatballs, and even while making a roast. Ironically, I have never used it as a soup, though! It is an excellent recipe helper, and most people don’t know that.

1 can of Cream of Chicken soup

1 can of Cream of Mushroom soup

¾ of stick butter

Salt to taste

Pepper to taste

Now that we have all of our ingredients ready, let’s start cooking!

Pulling Everything Together

Let’s jump in. First, preheat your oven to 350 degrees Fahrenheit. Now, start by taking your 2 cups of instant rice and pouring them into the 13×9 glass dish. Spread the rice evenly along the bottom. Next, open the two cans, one being Cream of Chicken and the other Cream of Mushroom soup. I grew up in Kentucky, so my motto is that every good casserole has some kind of cream in it–it’s true. Pour in both cans. There is no need to mix ingredients yet.

Once you have emptied both cans, take one of the empty cans and fill it with water. Pour this metal can full of water into your 13×9 baking dish. Now, it is time to combine everything using a spoon. Mix together the rice, water, and 2 cans of Cream of Chicken and Cream of Mushroom soup. Mix well until everything is fully combined

It’s time to meet the star of the dish, the Lipton Onion Soup mix. You will smell its delicious flavors as soon as you open the package. Next, pour half of the dehydrated onion soup mixture into your glass baking dish. Make sure to save the other half, as I recommend that you sprinkle it on top of the chicken at the end. With a spoon, combine the onion soup mix with the existing mixture.

Get out your chicken breasts. Place the 3 chicken breasts on top of your rice mixture. On top of each chicken breast, add a pinch of salt and a pinch of pepper, to your taste. I prefer to use fresh ground salt and pepper. You are also going to use the other half of the Lipton Onion Soup mix. Sprinkle it evenly over the 3 chicken breasts, covering each of them with the mix as fully as possible. Doing this will add so much flavor to the casserole overall, and will leave a nice flavorful crust on the chicken.

Now, take ¾ stick of butter, and slice that into 6 equal chunks (does not have to be accurate). Place 2 chunks of butter on each chicken breast. In the oven, the butter will melt and seep down into the rest of the mixture, adding flavor and moisture.

Before you throw your dish in the oven, cover it with aluminum foil to avoid burning the top. The oven should be preheated to 350 degrees Fahrenheit. Pop your dish in the oven for 1 hour, and after one hour, the dish will be ready to take out and serve. Make sure to check that your chicken breasts have cooked to an internal temp of 165 degrees Fahrenheit for safety purposes.

To serve, use a large serving spoon to scoop out 6 servings onto plates for your whole family.

This recipe is easy to prepare, affordable, filling, and makes enough food for everyone that you love. Or, even just enough to feed one person all week. Let me know if you make this recipe! I would love to know if you and your family approve as well.

Other Thoughts

This may be the perfect recipe for your kids and spouse, but it also makes a thoughtful and delicious gift for an older relative, neighbor, or friend who may need a little extra help or support.

Casseroles have long been a symbol of comfort and care, and this chicken and rice casserole is no exception. It’s a warm and satisfying dish that’s perfect for sharing with others, and it’s easy to prepare in advance and take with you to someone’s home.

Bringing a homemade meal to someone who may be going through a difficult time, whether it’s an illness or just a tough week, can be a meaningful way to show you care. Not only does it provide nourishment, but it can also lift their spirits and remind them that they’re not alone.

The next time you make this chicken and rice casserole, consider making a double batch and sharing it with someone in need. It’s a small gesture that can make a big difference in someone’s day.

The last few recipes I’ve shared have been savory, so I think it’s high time for something sweet instead. Today I will be sharing my delicious blueberry sweet biscuit cake recipe with you. When I was out grocery shopping I saw these Pillsbury sweet blueberry biscuits. I had no idea these even existed! I knew I had to think of a fun and easy way to jazz them up a bit. This recipe is a bit of a hybrid between a dump cake and a crumble, but it is sure to wow!

Keep reading to see how I transformed these biscuits into a quick and easy family-favorite dessert.

Let’s Get to Baking

The first thing I did was pop open the biscuit can. I know tons of people who are scared of the biscuit can popping open. Don’t be a sissy and just get it over with quickly! Wack the can on the edge of your counter and it should do the trick. I will be using two cans and setting aside the frosting for later.

Once you have your biscuit cans open, separate the biscuits and line them in a baking dish. I prefer using a heat-safe glass dish. I’m using my favorite casserole dish that is uneven on the bottom so it spins, which is actually great for when you need to frost something. You don’t have to perfectly line up the biscuits in your dish, I tore up the last biscuit and placed it in any empty spaces I could.

Now that the biscuits are in the baking dish, I am going to drizzle some Duncan Hines whipped cream cheese frosting over top. To make the process easier, I am microwaving the cream cheese frosting until it can be smoothly poured over the biscuits. Stir the frosting in between each time you microwave it. I found that 10-second intervals worked best.

I used about ¼ of the frosting. You can use the rest of the frosting for another recipe or if you would rather use it instead of the frosting that came with the Pillsbury biscuits. Either way, it should work.

Blueberry Pie Filling

With our biscuits lightly frosted with whipped cream cheese frosting, it’s time to add some blueberry pie filling. I am using the Great Value pie filling, but any other brand will work just fine, too. One of my favorite things about this pie filling is that it has a pop-top lid. I know that sounds weird but I absolutely love not having to use a can opener. Manual can openers always hurt my wrists and I haven’t gotten around to buying a fancy electric one. I remember going over to my grandma’s house and admiring her electric can opener, it seemed so bougie!

Using a spatula, spread the pie filling evenly on the biscuits. Blueberries are not typically something my family reaches for. Usually, my husband always wants something banana-nut, my daughter always wants something chocolate, and I always want something cherry!

After spreading the blueberry pie filling, I am using Martha White Blueberry Muffin Mix over the top. This will give the mixture a crumble-like texture. This recipe is very similar to a dump cake. It looks really fancy coming out of the oven but all you had to do was dump some ingredients into a pan!

The Last Few Steps

The last few steps for this recipe are to slice up a stick of butter and place the slices evenly on top of our biscuits. Keep in mind that this recipe is not only going to work a lot better, but taste a lot better if you use real butter. Margarine isn’t going to cut it here!

Finally, we are going to pop this into the oven at 375 degrees for 15 minutes. You’ll want it to be a nice golden brown along the edges of the pan when you take it out of the oven. If you are unsure that it’s done, use the handy knife trick. Whether or not the knife comes out cleanly tells you how much longer you need to bake it. If the knife comes out cleany, it’s done!

The biscuit cans came with some icing so I am going to use that instead of the whipped cream cheese frosting, but you can top it either way!

Now that your biscuit cake is iced, it’s time to plate and taste it! My family absolutely loved this delicious blueberry biscuit cake and it is definitely going to be added to my recipe rotation.

Try this recipe out for yourself and let me know what you and your family think of it!

Need an easy and affordable lunch to make for your entire family on the weekend? In our family, Sundays after church are a prime meal time for me, my husband, Matt, and our 3 kids. However, Sundays are always a very busy day for us, leaving me little time to do any meal prep prior to lunch.

Where do I turn? To simple and delicious recipes that are favorites for my entire family time and time again. Let me share one of those fan-favorite recipes with you! This recipe is a pizza-crust-based layered breakfast bake that only has a few steps and makes 6-8 large breakfast squares. Because who says you can’t eat breakfast for lunch?

What You Need

You will need several ingredients and a couple of kitchen essentials to create this recipe at home. Here are 2 lists that include everything you need for this recipe:

Kitchen Tools

1 large rectangular glass baking dish, the bigger the better!

1 regular whisk

Ingredients

1 package of Pillsbury Pizza Crust

1 package of Pioneer gravy mix (or your choice of gravy mix)

Toppings such as diced ham, sausage, and/or bell peppers

6 eggs

Shredded cheddar cheese (or whatever your family likes best)

A pinch of garlic powder

A pinch of parsley

Salt to taste

Pepper to taste

Pre-Baking Crust & Gravy

This recipe comes together quickly, so let’s jump in. First, take a look at the back of your Pillsbury Pizza Crust package. Preheat your oven, then follow the pre-baking instructions for the crust. Bake the pizza crust in your large rectangular glass baking pan, spreading the dough evenly across the bottom so it reaches all four corners of the pan.

While the pizza dough is pre-baking, this is the perfect time to make your gravy. I prefer to use Pioneer gravy mix because it is a peppery gravy, which adds a little bit of spice to the recipe. Follow the instructions on your gravy package and heat on the stovetop til the gravy is warm and easily pourable.

When it is time to take your pizza crust out of the oven, remember that if it is still a little bit doughy, that is ok! We are going to throw it back into the oven later on once our other layers have been added. That said, make sure that you leave your oven on, at the same temperature that you baked the pizza crust. Once your crust has been pre-baked and your gravy has been made, it is time for the next steps.

Pulling It All Together

Next, you will want to make sure that you have your gravy ready to go as well as your favorite toppings. I am using diced ham and French’s Fried Onions. You can use whatever toppings you like, whether those toppings be meat or veggies. Here are some examples of additional topping options:

Diced bell peppers

Finely chopped onion

Chopped spinach

Bacon crumbles

Small chunks of breakfast sausage

It is time to officially pull everything together! Directly on top of your pre-baked pizza dough, pour out your gravy. If you would like to save some gravy to top the breakfast squares with at the end, reserve about a quarter of your gravy for this purpose and keep it warm on the stovetop.

Spread out your gravy evenly across the dough just as you would pizza sauce. Make sure that it is spread all the way out to the edges of the baking dish so that every breakfast square will have the same amount of gravy.

Next, load up the gravy layer with your toppings, making sure that they are evenly placed on top of the gravy. After you have done this, it is time to add your six eggs.

Once you have your eggs ready, crack your eggs into the baking dish, making two rows of three across. I like to crack my eggs by softly hitting each egg with a butter knife and then separating the shell. You will now need to grab your whisk. Use your whisk to gently break each of the six egg yolks so that the egg yolks and whites become more of a homogenous mixture. Try to do this without disturbing your layers of toppings and gravy, but, like most everything in this recipe, it does not have to be perfect to get a tasty end result.

Now you will want to top the eggs with shredded cheese. I am using cheddar because that is what my family likes best. Feel free to choose whichever type of cheese your family tends to enjoy the most! Make sure to layer it on thick for maximum cheesiness and flavor.

There is one last step before you will throw your dish back into the oven. On top of the cheese layer, sprinkle a pinch of garlic powder evenly across. Then, sprinkle dried parsley across the cheese (eyeball it!) as well. The parsley adds a subtle flavor, but in my house, I have to be careful I don’t put on too much, or my kids won’t want to eat it because they see green! Last, add salt and pepper to taste. I prefer fresh-ground salt and pepper. Adding spices is made extra special by the matching spice containers I got from Amazon!

Final Bake

Your dish is minutes from being completed! Put your baking dish back into the oven for 6-10 minutes, as these are the instructions to complete the baking of the pizza crust. I went ahead and put mine in the oven for 6 minutes, and then checked to see if the dish was cooked all the way through or if it needed a few more minutes. Depending on your oven, this process will vary.

After the 6 minutes were up, I pulled the baking dish out of the oven. It smelled amazing! I used a toothpick (you can also use a butter knife or fork) to stick all the way down to the bottom layer and make sure everything has cooked through, especially the eggs and pizza crust. After 6 minutes, my breakfast squares were ready to be served!

To serve, cut the dish into 6-8 evenly spaced squares. Scoop out your squares with a spatula and serve individually on plates. If you reserved a bit of your gravy, you can now pour the gravy over each square or let your family members serve themselves!

This recipe is quick, affordable, filling, and makes enough for the whole family, no other sides are needed. I hope you enjoyed making this recipe!
