Ingredients
For the Ham
- 1 (4–6 pound) ham butt or shank
- 1 cup water
For the Creamy Sauce
- 1 stick (½ cup) butter
- ¼ cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon Tony Chachere’s Cajun seasoning, or your favorite Cajun seasoning
- 1 tablespoon dried parsley flakes
- 2 teaspoons minced garlic
- 2 cups reserved ham juice from the slow cooker
- 2 cups heavy cream
- 1 cup mayonnaise
- 1 cup sour cream
- ¼ cup Dijon or stone-ground mustard
- 2 tablespoons creamy horseradish, optional
For Serving
- Rolls or sandwich buns
Instructions
1. Slow cook the ham.
Place the ham in your slow cooker and add 1 cup of water. Cover and cook on LOW for 8–10 hours, or until the ham is very tender and pulls apart easily.
2. Shred the ham.
Remove the ham from the slow cooker and reserve 2 cups of the cooking liquid. Remove the bone and any excess fat, then chop or shred the ham. Set aside.
3. Make the roux.
Melt the butter in a large pot over medium heat. Add the flour, salt, pepper, Cajun seasoning, parsley, and minced garlic. Stir and cook for about 1–2 minutes.
4. Make the creamy sauce.
Slowly whisk in 2 cups of the reserved ham juice. Add the heavy cream and continue cooking and stirring until the sauce begins to thicken.
5. Add the flavor.
Reduce the heat and stir in the mayonnaise, sour cream, Dijon mustard, and creamy horseradish, if using. Stir until the sauce is smooth and creamy.
6. Add the pulled ham.
Fold the shredded ham into the sauce. Continue cooking over low heat until everything is heated through and the sauce is thick enough to coat the ham.
7. Serve.
