Some recipes don’t need to be fancy to be good—and this is definitely one of those recipes.
Mammaw’s One-Dish Vegetable Casserole is an old-fashioned, easy side dish made with canned vegetables, plenty of cheese, a creamy mayo mixture, and a buttery Ritz cracker topping. And the best part? You mix everything right in the casserole dish, so there’s hardly any cleanup.
This is one of those recipes that’s perfect for holidays, Sunday lunch, potlucks, or those nights when you need an easy side dish using things you probably already have in the pantry.
Why I Love This One-Dish Vegetable Casserole

Ingredients
- 3 cans assorted vegetables, drained well
- 1 cup mayonnaise
- 2 generous handfuls shredded cheese, about 1½–2 cups
- Seasoning salt, to taste
- Black pepper, to taste
- 1 sleeve Ritz crackers, crushed
- 1 stick (½ cup) butter, melted
How to Make Mammaw’s One-Dish Vegetable Casserole
Preheat your oven to 350°F.
Drain all three cans of vegetables really well and dump them directly into a casserole dish.
Add the mayonnaise, shredded cheese, seasoning salt, and black pepper right on top of the vegetables. Mix everything together in the casserole dish—no extra mixing bowl needed!
In a small bowl, combine the crushed Ritz crackers with the melted butter.
Spread the buttery cracker mixture evenly over the top of the vegetables.
Bake at 350°F for about 25 minutes, or until everything is hot and bubbly and the Ritz topping is golden brown.
Serve warm and enjoy!
What Vegetables Can I Use?
That’s part of what makes this recipe so easy. Use three cans of vegetables your family likes or whatever you already have in the pantry.
Green beans, corn, peas, carrots, mixed vegetables, or a combination of them would all work.
Just make sure you drain the vegetables really well before adding them to the casserole so the finished dish doesn’t get watery.
