If you remember Hamlin’s El Toro Dip, you know why this recipe is worth making! It’s creamy, tangy, salty, and full of flavor from green olives, blue cheese, and grated onion.
This is one of those old-school dips that doesn’t need a long ingredient list or a lot of work. Just grate, whisk, chill, and serve. I love it with fresh vegetables, but it’s also delicious with crackers or chips.
Hamlin’s El Toro Dip Recipe
Ingredients
- 1¾ cups mayonnaise
- 6 tablespoons buttermilk
- 3½ ounces green olives with pimentos, grated
- ¼ onion, grated
- 2 ounces blue cheese, grated or finely crumbled
- ¼ teaspoon garlic powder
Instructions
Add the mayonnaise and buttermilk to a mixing bowl and whisk until smooth.
Add the grated green olives, grated onion, blue cheese, and garlic powder. Whisk everything together until well combined.
Cover and refrigerate until the dip is nice and cold. I recommend giving it at least an hour in the refrigerator so all those flavors have time to come together.
Stir again before serving.
What to Serve With El Toro Dip
I served mine with a big platter of celery, cucumbers, and colorful bell peppers. You could also serve it with carrots, potato chips, pretzels, or your favorite crackers.
Easy Buttermilk Substitute
No buttermilk? You can make a quick substitute with regular milk and apple cider vinegar.
For the 6 tablespoons of buttermilk in this recipe, combine 6 tablespoons milk with a little over ½ teaspoon apple cider vinegar. Let it sit for about 5–10 minutes before using.
