Why You’ll Love This Recipe

✅ One pan = easy cleanup

✅ Family-friendly with adjustable spice

✅ Creamy, savory, slightly sweet & totally comforting

✅ Ready in about 30 minutes

✅ Perfect for busy weeknights

Ingredients

  • 1 (13.5-ounce) can coconut milk
  • ¾ cup water
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons red curry paste (optional, for heat)
  • 2 teaspoons minced garlic
  • 1 teaspoon minced fresh ginger
  • 2 teaspoons sesame oil
  • 4 green onions, thinly sliced (divided)
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
  • 2 packages ramen noodles
  • Sriracha hot sauce, for serving (optional)

Instructions

Step 1: Preheat

Preheat your oven to 375°F (190°C).

Step 2: Make the Sauce

In a 9×13-inch baking dish, whisk together:

  • Coconut milk
  • Water
  • Soy sauce
  • Red curry paste (if using)
  • Garlic
  • Ginger
  • Sesame oil

Step 3: Add the Chicken & Noodles

  • Reserve 3 tablespoons of green onions for topping.
  • Add the remaining green onions to the sauce.
  • Add the ramen noodles and only 1 seasoning packet (discard the rest).
  • Toss the chicken pieces in the sauce to coat.
  • Arrange the chicken so it sits under the noodles.

Step 4: Bake

Cover the dish tightly with foil.
Bake for 22–24 minutes, flipping the noodles halfway through so they fully submerge in the liquid.

Step 5: Finish & Serve

Remove from oven and stir everything together until well combined.
Top with reserved green onions and drizzle with Sriracha if you like a little heat.

Serve warm and enjoy every creamy bite 🤍

Tips & Variations

🔥 Want more spice? Add extra red curry paste or chili flakes.

🥦 Add veggies like shredded carrots, bell peppers, or snap peas before baking.

🍗 Use rotisserie chicken for an even faster shortcut.

🍜 Double the recipe (trust me… you’ll want leftovers).
