- 3 medium zucchini, diced
- 1 (6-ounce) box Stove Top Chicken Stuffing Mix
- ½ cup (1 stick) butter, melted
- 1 (10-ounce) can cream of chicken soup
- ½ cup sour cream
Instructions
- Preheat the oven to 350°F and grease a 9×13-inch baking dish.
- In a large bowl, combine the melted butter with the dry stuffing mix. Set aside half of the stuffing mixture to use for the topping.
- To the remaining stuffing mixture, add the shredded rotisserie chicken, diced zucchini, cream of chicken soup, and sour cream. Stir until everything is well combined.
- Spread the chicken and zucchini mixture evenly into the prepared 9×13-inch baking dish.
- Sprinkle the reserved buttery stuffing mixture evenly over the top.
- Bake uncovered on the middle rack for 35–45 minutes, or until the casserole is heated through, the zucchini is tender, and the stuffing on top is golden brown.
- Let the casserole sit for about 5 minutes before serving.
