Creamy Cajun Alfredo Cabbage with Sausage & Bacon
This Alfredo Cabbage is rich, creamy, smoky, and packed with flavor! Instead of pasta, thinly sliced cabbage becomes the “noodles,” then everything gets tossed in a homemade Parmesan cream sauce with crispy bacon and smoked sausage.
It’s an easy one-pot dinner that’s hearty enough to serve on its own.
Ingredients
- 1 large head cabbage
- 1 lb bacon, chopped
- 1 package smoked sausage, sliced
- 1 onion, chopped
- 1 tablespoon minced garlic
- Cajun seasoning, to taste
- Salt and black pepper, to taste
- 3 cups heavy whipping cream
- 1 cup grated Parmesan cheese
Instructions
1. Cook the bacon
In a large pot or Dutch oven, cook the chopped bacon until crispy.
Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the pot.
2. Brown the sausage
Add the sliced smoked sausage to the bacon grease and cook until browned on both sides.
Remove the sausage and set it aside with the bacon.
3. Cook the onion and garlic
Add the chopped onion and garlic to the pot. Cook until the onion is soft and translucent.
Carefully drain off most of the remaining grease.
4. Make the cabbage “noodles”
Cut the cabbage into long, thin strips, almost like wide Alfredo noodles.
Add the cabbage to the pot. It may look like a lot at first, but it will cook down considerably.
Season with Cajun seasoning, salt, and pepper. Cook, stirring occasionally, until the cabbage wilts and becomes tender.
5. Make it creamy
Once the cabbage is soft, pour in the heavy whipping cream and add the Parmesan cheese.
Stir well, then add the cooked sausage and bacon back to the pot.
6. Simmer
Reduce the heat and simmer for about 20 minutes, stirring occasionally, until the cream and Parmesan thicken into a rich Alfredo-style sauce.
Taste and adjust the Cajun seasoning, salt, and pepper as needed.
Serve hot and enjoy!

Don’t rush the final simmer! Giving the heavy cream and Parmesan time to cook down is what turns it from a creamy cabbage dish into that thick, rich Alfredo-style sauce.
