This sweet and savory baked chicken is one of those dump-and-bake dinners that feels almost too easy β but it comes out tender, flavorful, and perfect over fluffy rice. Itβs a true one-dish meal when paired with rice and a simple veggie on the side.
π Ingredients
- 2 lbs boneless, skinless chicken breasts (cubed)
- 1 cup Catalina dressing
- 1 cup apricot jelly
- 1 packet onion soup mix

Preheat oven to 350Β°F.

In a medium bowl, mix together Catalina dressing, apricot jelly, and onion soup mix until well combined.

Place cubed chicken into a 9×13 baking dish.

Pour the sauce over the chicken and stir until all pieces are evenly coated.

Bake uncovered for 45 minutes. (Do not cover with foil β this helps the sauce thicken and caramelize slightly.)

Serve hot over rice.
